流心太陽蛋蔥油豬扒飯
用具或器材準備:
- 1 平底鑊
- 1 易潔鑊
烹調的材料:
豬扒醃料
- 1 茶匙 鹽
- 1 茶匙 糖
- 2 茶匙 生粉
- 2 茶匙 豉油
- 1 茶匙 紹興酒
- 1 茶匙 油
- 適量 胡椒粉
- 1 湯匙 清水
蔥油材料
- 1½ 湯匙 油
- ¾ 茶匙 鹽
- 1 茶匙 糖
- 50 克 蔥花
其他
- 4 塊 豬扒
- 2 隻 雞蛋
- ½ 茶匙 梳打粉
烹調步驟及注意事項:
流心太陽蛋蔥油豬扒飯
- 將半茶匙的梳打粉加入清水
- 然後將豬扒置於梳打水中浸泡30分鐘,使豬扒變得鬆軟,同時血水和雪味也能被迫出
- 將浸過梳打水的豬扒徹底清洗乾淨,然後啤水10分鐘
- 將豬扒的筋位以剪刀輕輕剪一下(有助煎豬扒時,豬扒更平坦,不會捲起),然後瀝乾水份備用
- 將瀝乾水份的豬扒,以刀背輕力剁數十下,使肉質更嫩滑
- 以廚房紙吸乾水份
- 然後可以醃製豬扒,將豬扒醃料加入拌勻。 醃製大概30分鐘
- 製作蔥油: 先將蔥清洗乾淨,切段再切粒。
- 燒紅鑊,落油,當油燒至約八至九成滾時,就可以加入蔥花,快炒幾下,隨即加入鹽和糖拌勻,然後馬上離火
- 將已醃製好的豬扒,放於平底鑊中,已細至中火慢煎
- 煎至兩面金黃色
- 煎流心太陽蛋: 取出平底鑊,倒入油,燒紅油後,就可以加入雞蛋。以半煎炸的形式,將雞蛋白的圓周炸至金黃色,此時蛋黃仍是生的,馬上熄火。
- 蓋上蓋,利用餘溫將蛋黃焗至稍為凝固即可。
- 可以上碟,完成!
